Pelorus Rosé taste description

Pelorus Rosé is smooth and elegant, with a pale salmon hue and brambly aromas. The nose is laden with raspberries, cranberries and wild strawberries, while red florals, rosehip and marzipan hover at the fringe. Baked quince, cranberry and brioche meet citrus notes on the palate, while its fine structure persists all the way to a soft, dry finish.

Pelorus Rosé is a superb match for fresh shellfish such as oysters, clams and scallops. It lends itself well to creamy desserts like buttermilk pannacotta with strawberries, or grilled peaches with goats’ curd and honey.

Pelorus Rosé Winemaking

How it's made

Pelorus is made using the méthode traditionnelle. The Chardonnay and Pinot Noir grapes are whole-bunch pressed. Fermentation takes place in stainless steel tanks, where the wine also goes through malolactic conversion. The wine is aged en tirage for a minimum of 24 months.

Vineyards and terroir

The Chardonnay and Pinot Noir grapes in Pelorus come from a selection of vineyards planted in the warm stony soils close to the winery. These hold the ideal conditions for the balance of ripeness and acidity required for our signature sparkling wine.
