Cloudy Bay Lemon & Herb Popcorn
Serves 2 / Prep 5 minutes / Cook 5 minutes
Ingredients:
- 60g butter
- 1 tablespoon chopped herbs such as parsley, oregano, thyme
- Finely grated zest of one lemon
- Quarter of a teaspoon garlic powder or half a teaspoon granules
- 2 tablespoons oil (sunflower or coconut)
- Third of a cup popcorn kernels
- Half a teaspoon turmeric
- Half a teaspoon salt
Method:
- Put the butter, herbs and garlic powder in a small saucepan over a medium heat and melt together. Set aside.
- Heat the oil in a large heavy based saucepan, with a lid, over a medium heat. Add the popcorn, turmeric and salt to the oil and cook, stirring until the popcorn starts popping.
- Then quickly cover, shaking constantly so you don’t burn the popcorn.
- When the sound of popping subsides, uncover, drizzle over the butter mixture and shake/stir well to coat.
- Season with more salt if preferred.
