This summer, SAKU brings a new flavour to our Marlborough estate: a dining experience shaped by the elegance of Japanese cuisine and the natural beauty that surrounds the vines.
Meaning “to bloom”, SAKU draws on the rhythm of the vineyard and the harmony at the heart of Japanese cooking. Created by Nari Jahana and Bo Jeong, the team behind Blenheim icon Restaurant Sasa, this new restaurant brings together balance, seasonality and deep respect for pure ingredients. It’s an approach that feels right at home among Cloudy Bay vineyards.
As you might expect, each dish at SAKU is created with Cloudy Bay wines in mind. Delicate Haku kingfish carpaccio finds perfect poise alongside 2023 Chardonnay, while Cloudy Bay Clams saka-mushi (gently steamed with sake and spring onion) is an exquisite match for the vibrant 2025 Sauvignon Blanc.
