Combine equal quantities of soft, creamy goats cheese, such as chèvre or creamy feta and cream cheese in a bowl.
Mash together with a fork and season with finely grated lemon rind, pepper and a squeeze of lemon juice.
Roll into walnut sized balls and refrigerate to firm up.
Roll the balls in flavourings of your choice to coat and serve with crostini or crackers.
Flavouring Ideas
Pistachio & dukkah: finely chop toasted pistachios and combine with dukkah.
Herb & lemon: very finely chop fresh herbs such as flat leaf parsley, dill, chives or chervil (basil and mint taste great but go brown quickly so only use if you are serving immediately). Stir through some finely grated lemon zest.
Sundried tomatoes & chilli: very finely chop sundried or semi dried tomatoes and combine with very finely chopped red chilli or semi dried red chilli and a little paprika.
Chopped toasted nuts, seeds such as sesame and poppy, dried herbs and spices such as sumac or spice mixes such as za’atar are also great for coating.
